List of Ingredients
1 (1#.) pkg. frozen chopped Spinach, thawed
1/2 C Onion, chopped
4 T Butter or Margarine, melted
1 C Sour Cream
4 T Parmesan cheese, grated
1/2 t Salt
1/4 t Black Pepper
Dash cayenne pepper
2 (13.75-oz.) cans Artichoke Bottoms, drained
Parmesan Cheese for topping
Recipe
Thaw spinach, drain and squeeze out most of the moisture.
Saut‚ onion in butter or margarine for about 5 minutes or until tender. Stir in the drained spinach. Add sour cream, Parme-san cheese, salt and peppers.
Spoon spinach mixture into the artichoke bottoms. Sprinkle with Parmesan cheese. Carefully place in shallow baking dish.
Add water to barely cover the bottom of baking dish. Place dish in preheated 350-degree oven and bake for about 20 minutes or until bottoms are heated through and steamy.
Serves 10.
