Wash and drain beans. Put beans and water in a pan and boil 2 minutes. Remove from heat. Cover and let soak 1 hour. Add salt, bring to boiling, cover when most of foam is gone and boil gently until tender. Kidney, pinto or pea beans -- about 2 hours.
Great northern beans -- 1 to 11/2 hours.
Small red or white beans -- about 11/2 hours.
Lima beans -- about 1 hour.
Black-eyed peas -- about 1/2 hour.
Add a little water during cooking if needed.
Makes about 21/2 cups cooked beans.
To season dry beans, split peas or lentils, add bacon or ham drippings, canned luncheon meat, cooked salt pork, cooked ham or ham bone before cooking.
