Feather Light Corn Fritters

List of Ingredients

2 C Corn (Canned or Fresh)
2 Eggs, separated
1/4 t Pepper
2 T Flour
1/4 t Salt, opt.

Confectioner's Sugar


Recipe

To the corn, add the beaten Egg Yolks, Flour and Seasoning. Add stiffly beaten Egg Whites and blend. Drop by spoonfuls the size of an Oyster on a hot Buttered griddle and brown on both sides.
Dust with Confectioner's Sugar.

These are good served with my Balsamic Marinated Chicken recipe.
