6 cloves Garlic, crushed
2 15 oz cans White Beans (Cannelloni or Great Northern)
2 15 oz cans Chicken Broth
1 head Escarole
1/2 C White Wine
Salt and Pepper
Recipe
Sauté garlic in olive oil on med heat (do not burn). When you smell the aroma of the garlic; add chicken broth. Bring to a simmer and add beans. Cook for about 10 minutes and add chopped escarole. Once wilted, add 1/4 to 1/2 C grated Parmesan or Romano cheese.
