Zucchini ala Savina*
List of Ingredients
1 Lg or 2 Small Zucchini
2 T Olive Oil
1 Clove Chopped Garlic
1 # Can Tomatoes*, cut up
1 t Basil
1/2 t Sugar
S & P, to taste
1 Egg, beaten
Recipe
Wash Zucchini, trim off ends and cut in half lengthwise.
Slice in 3/4" slices. Cook in heated Olive Oil along with Garlic until crisp-tender (don't brown).
Add Tomatoes and Seasonings. Simmer about 15 minutes, covered. Turn off heat. Stir in Egg, cover and let stand 1 minute.
I have successfully used Stewed Tomatoes, but then I omit the Sugar called for in the recipe.
