    List of Ingredients


    • 1 C (approx 12) graham cracker squares, chopped
    • 2 T fat-free margarine
    • 1/2 C boiling water
    • 1 Pkg (3 ozs) lemon gelatin
    • 1 Pkg (3 ozs) light cream cheese, softened
    • 1 lemon, zested
    • 2 C (16 ozs) fat-free sour cream
    • 1 container (8 ozs) light frozen whipped topping, thawed
    • Strawberries for garnish


    Instructions


    1. Coarsely chop graham crakers with Food Chopper. Combine with margarine in Classic Batterl Bowl. Press crumb mixture into bottom of Springform Pan. Mix boiling water and gelatin dessert powder until gelatin is dissolved. Cut cream cheese into small cubes. Add to hot gelatin. Whisk until dissolved. Zest 1 t lemon rind with Lemon Zester/Scorer. Set aside.
    2. Juice lemon with Lemon Aid to get approximately 3 T of juice. Combine lemon mixture, lemon zest, lemon juice, and sour cream with Stainless Steel Whisk in Batter Bowl. Fold in whipped topping. Pour over crust. Chill until set, approximately 30 minutes. Slice strawberries with Egg Slicer Plus. Arrange on top of cheesecake.
