Almond Turkey Salad

Recipe Introduction
Almond Turkey Salad is a great way to use leftover chicken or turkey for a sensational lunch or light supper. Golden raisins or dried apricots are an added treat.
List of Ingredients
2 cups chopped, cooked chicken or turkey
1 cup sliced celery
1/2 cup snipped dried apricots or golden raisins
1/3 cup slivered almonds, toasted
1/2 cup mayonnaise
2 tablespoons frozen orange juice concentrate, thawed
1/2 teaspoon McCormick® California Style Garlic Powder
1/4 teaspoon McCormick® Ground Black Pepper
1/4 teaspoon McCormick® Ground Ginger

1. In large bowl, stir together chicken or turkey, celery, apricots and almonds.
2. Add remaining ingredients. Mix well. Refrigerate.
3. Line 4 serving plates with lettuce leaves and tomato slices. Top with chicken salad.
*Also great as sandwich filling in pita bread, croissants or crusty rolls.
