    Oh Those Jelly Rolls

    A cake with out flour? You'd better believe it!
    Serves 6


    List of Ingredients


    • 3 eggs, separated
    • 1/4 cup (4 tablespoons) sugar
    • 1 teaspoon vanilla
    • 3 ounces Ricotta cheese
    • 1/4 cup diet raspberry jam
    • 1-1/2 cups sliced, fresh strawberries


    Instructions


    1. Preheat oven to 375 degrees F.
    2. Line 12-1/4 x 8-1/4 x 1 inch shallow baking pan with kitchen parchment paper coated with non stick spray.
    3. In medium bowl, using electric mixer, beat egg whites until stiff but not dry. (Peaks should just fold over when better is removed.)
    4. Without washing beaters, beat egg yolks in large bowl.
    5. Add sugar gradually. Contine to beat until very thick.
    6. Fold in cornstarch and vanilla into egg yolks.
    7. Carefully fold egg whites into yolk mixture and pour batter onto perpared pan. Smooth batter evenly with spatula to edge of pan.
    8. Bake 12 to 15 minutes, or until cake springs back when gently pressed.
    9. Turn out onto towel-covered cooking rack.
    10. Remove parchment paper and carefully roll cake up in towel.
    11. When cake is cook, unroll and spread lightly with cheese.
    12. Spread jam over top.
    13. Cover with sliced strawberries.
    14. Roll cake to enclose filling, seam side down. May be refrigerated before serving.


    Final Comments


    Deal-A-Meal Helpful Hint: Dampen baking pan with a little water before putting parchment paper in place. It won't slip!
