Turkey Meat Loaf Ring

Recipe Introduction
I bet you've crept down to the refrigerator in the night for a slice or two or more of cold meatloaf. Well you don't have to be furtive any more as long as you maintain PORTION PATROL! Try this in a sandwich...as if I had to tell you that.
Makes 8 servings

List of Ingredients
- 14 ounces ground turkey
- 2 eggs, lightly beaten
- 18 saltine crackers, crumbled
- 1/4 cup uncooked oatmeal
- 3 tablespoons oat bran
- 1 cup green peas
- 1/3 cup finely chopped onion
- 1/3 cup corn
- 2 tablespoons chopped parsley
- 1 tablespoon Worcestershire sauce
- 1 clove garlic, minced
- 1/4 teaspoon each salt and freshly ground pepper
- 6 ounces (3/4 cup) tomato sauce
- 2 cups steamed cauliflower or broccoli (to round out menu)
Instructions
- Preheat oven to 350 degrees F.
- In large bowl thoroughly mix all ingredients (except steamed vegetables).
- Turn into ring pan or 9x5-inch loaf pan that has been coated with non-stick spray.
- Bake 50 to 60 minutes. Let stand 15 minutes.
- Unmold onto serving platter and garnish with steamed vegetables.
Final Comments
If the thought of green peas gives you the heebie-jeebies, (I used them to flick my brother in the face), then just substitute with extra corn. Remember that peas and corn count as bread cards!
