    Recipe Introduction


    For those times when good enough just isn't enough. here's a super-duper snack that no one will be able to resist. It's a good idea to make this for a crowd, so you won't be quite as tempted to gobble up the entire batch.

    Serves 9 (1 cup)


    List of Ingredients


    • 9 cups air-popped popcorn
    • 1/4 cup + 2 tablespoons reduced-fat peanut butter
    • 2 tablespoons I Can't Believe It's Not Butter! Light Margarine


    Instructions


    1. Preheat oven to 375 degrees. Place popped popcorn in a very large bowl. In a small saucepan, melt peanut butter and margarine over low heat, stirring constantly until smooth. Drizzle melted mixture over popcorn. Mix well to coat. Spray large baking sheet or jelly roll pan with butter-flavored cooking spray. Evenly spread popcorn mixture in pan. Bake for 4-6 minutes, stirring every 2 minutes.


    Final Comments


    HINT: USually a full 1/2 cup unpopped corn makes about 9 cups popped popcorn, if prepared in a air popper.
