    List of Ingredients


    • 1 pound lean ground turkey
    • 1 can (1lb) fat-free refried beans
    • 1 can (14 1/2oz) diced tomatoes with green chiles
    • 9 (7 inch) Flour Tortilla
    • 1 cup salsa
    • 1 cup low-fat Mexican Blend cheese


    Instructions


    1. Preheat oven to 350 degrees. Spray a 9x13 inch pan with cooking spray. Spread each tortilla with 2 tablespoons refried beans.
    2. In a non stick skillet over medium heat brown ground turkey. Drain off excess fat. Stir in Tomatoes.
    3. To assemble: Lay 3 tortillas in bottom of pan. Cover with 1/2 the meat/tomatoe mixture, and 1/4 cup cheese. Repeat layers. Place the last 3 tortillas on top with bean side down. Cover with Salsa and the remaining 1/2 cup cheese. Cover with aluminum foil (Janet's tip spray foil with non stick spray so cheese does not stick). Bake for 45 Minutes.
