    Hearty Corn Chili

    Recipe Introduction


    Serves 4 (1 1/2 cups)


    List of Ingredients


    • 8oz ground turkey or beef (90% lean)
    • 1/2 cup chopped onion
    • 1/4 cup chopped green bell pepper
    • 1 3/4 cup Mexican Style Stewed tomatoes, coarsley chopped, with juice
    • 2 1/2 cups toamto juice
    • 1 1/2 cups frozen whole kernel corn
    • 1 teaspoon chili seasoning mix
    • 1/4 teaspoon pepper
    • 3/4 oz Corn Chex, slightly crushed (3/4 cup)


    Instructions


    1. In large saucepan, sprayed with olive flacored cooking spray, saute meat, onion and green pepper until browned. Stir in stewed tomatoes, tomato juice, corn chili seasoning mix and pepper. Bring mixture to a boil. Lower heat. Simmer, uncovered, 15-20 minutes. When serving, evenly sprinkle corn chex over top of soup bowls.
