Two Singular Sensations/Veggie Pizza

List of Ingredients
- 1 12" prepared pizza crust
- 4 small garlic cloves, freshly pressed
- 1 teaspoon Italian seasoning
- 1 small red onion, sliced
- 1 small red bell pepper, sliced
- 1 small zucchini, sliced
- 1 cup fresh mushrooms, sliced
- 2 teaspoons freshly grated Parmesan cheese
- 1/2 cup shredded Colby-jack cheese
- non-stick cooking spray
Instructions
- Place the pizza crust on a pizza pan.
- Sprinkle the crust with the colby-jack cheese.
- Spray the skillet with non-fat cooking spray.
- Heat and saute the vegetables, garlic, and Italian seasoning for three minutes. Do not over cook them.
- Pour the vegetable mixture over the pizza crust and top with Parmesan cheese.
- Bake for 8-10 minutes.
- Serve immediately.

Tip: Prepared crust are available in most supermarkets; if you like you can even make your own crust. Just choose a recipe that calls for very little fat. Colby cheese is a delicious light flavored cheese. For this pizza you can use any favorite cheese if colby is unavailable.
