Smoked-Turkey Bean Soup

Recipe Introduction
Soup is one of our favorite lunch choices when we're traveling on a book tour. Soup's filling, of course, and it's easy to reheat leftovers in the microwave. But the best reason for choosing this hale and hearty dish is the flavor it delivers in every mouthful.
Serves 4 (1 1/4 cups)
List of Ingredients
- 1 (16-ounce) can Healthy Request Chicken Broth
- 1/2 cup chopped onion
- 1 cup shredded carrots
- 1/2 cup diced celery
- 1 (10 3/4-ounce) can Healthy Request Cream of Chicken Soup
- 1 (16-ounce) can great nothern beans, rinsed and drained
- 1 (6-ounce) package Healthy Choice 97% fat-free smoked turkey breast, diced
- 1 teaspoon dried parsley flakes
Instructions
- In a large saucepan, combine chicken broth, onion, carrots, and celery. Bring mixture to a boil. Stir in chicken soup, great northern beans, turkey, and parsley flakes. Lower heat, cover, and simmer for 15 minutes or until vegetables are tender, stirring occasionally.
