Carrot Cake

Carrot Cake
2 cups flour
2 cups sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 cups finely shredded carrot
1 cup cooking oil
4 eggs
Grease and lightly flour a 13x9x2-inch baking pan. In a mixer bowl combine the first 6 ingredients. Add the next 3 ingredients, beating with mixer till combined. Beat
on medium speed for 2 minutes. Turn into pan. Bake at 325 oven for 50 to 60 minutes.
Cream Cheese Frosting
1 3oz package cream cheese
1/4 cup butter or margarine
1 tsp. vanilla
2 cups powdered sugar
In a mixer bowl beat together cream cheese,butter or margarine, and vanilla, till light and fluffy. Gradually add powered sugar, beating till smooth. Spread over cooled
cake. Sprinkle with chopped nuts if desired. Cover store in refrigerator.Recipe
