Amaretto Chicken
List of Ingredients
2 tablespoons vegetable oil
1/2 cup bread crumbs
2 ounces slivered almonds
4 boneless, skinless chicken breast halves
1/2 cup flour (plus pinch of salt and pepper added)
1 egg, beaten
Heat oil in a large frying pan. Combine bread crumbs and almonds in a small bowl. Dredge chicken breasts
in flour, then in beaten egg, then in bread crumb mixture. Saute 4-5 minutes, turning twice, until golden
brown. (if chicken is thick, I recommend covering pan while sauteing.)
Sauce Part
1/2 teaspoon white pepper
2 cups fat-free half and half
1 cup apple juice
2 tablespoons cornstarch
1/8 cup water
1/2 ounce green onions, chopped
1 ounce Amaretto liquer
1 large apple, cored and sliced thin
1/2 teaspoon sugar
To make sauce, combine white pepper, half and half, and apple juice in a saucepan. Heat to boiling, stirring
frequently. Mix cornstarch and water until smooth. Add to sauce; stir until thickened. Add green onion, Amaretto, apple, and sugar. Serve over chicken.
Recommended: cook the chicken first, then cook the sauce. Sauce needs constant attention and is best to
use immediately. Chicken is very good even without the sauce.
