Rhubarb Delight
List of Ingredients
1/2 lb. margarine
2 cups flour
2 tbls sugar
Bake in a 9 by 13 pan at 350 degrees for 10 minutes.
Second layer:
5 cups rhubarb, cut fine
6 egg yolks
2 cups sugar
4 tbls flour
1/4 tsp salt
1 cup sweetened condensed milk
Mix together and fold in rhubarb last. Pour on crust and bake at 359 degrees for 40-45 minutes.
Third layer:
Beat six egg whites, add 12 tbls sugar, 2 at a time. Continue beating, add 2 tsp vanilla and a dash of salt. Beat until stiff. Spread on top and sprinkle with coconut and chopped walnuts. Bake until brown, 350 degrees for 10 minutes.
