Sweet and Sour Pork Chops
List of Ingredients
6 rib or loin pork chops, cut 3/4 to 1-inch thick
1 tablespoon shortening
1 bouillon cube
1 cup boiling water
1/4 cup vinegar
2 tablespoons soy sauce
1/4 cup sugar
8 3/4-ounce can pineapple chunks
6 green pepper rings, cut in fourths
1/4 cup chopped onion
2 tablespoons cornstarch
2 tablespoons water
Brown chops in shortening on both sides in skillet. Add bouillon cube, boiling water, vinegar, soy sauce, sugar, pineapple chunks [undrained], green pepper and onion. Cover and simmer 1 hour. Remove chops to heated platter. Combine cornstarch and 2 tablespoons water. Stir into cooking liquid. Cook, stirring constantly, until mixture is thick and clear. Serve over chops.
