    Key Lime Pie

    List of Ingredients


    • Crust = 1 package graham crackers - 1/2 cup sugar - 1/3 cup melted butter
    • Filling = 3 eggs(use yolks only) - 14 oz can sweetened condensed milk - 3/4 cup key lime juice - 1/2 pint whipped cream


    Instructions


    1. Crush graham crackers in a zip-lock bag with a rolling pin. Pour crumbs into a pie pan.

    2. Add 1/4 cup of sugar and mix with a fork.

    3. Pour the melted butter over the crumbs in the pie pan.

    4. Mix and press into bottom of pie pan and up the sides.

    5. Bake at 325 F for about 8 minutes, until brown. Let cool.

    6. Whip 3 egg yolks with the condensed milk in a bowl held over boiling water until frothy. (The steam from the boiling water heats the egg to prevent salmonella)

    7. Gradually beat in the lime juice.

    8. Pour into baked, cooled pie crust.

    9. Whip cream and add the other 1/4 cup of sugar at end of whipping process. (I used Cool Whip instead)

    10. Spread whipped cream over pie and freeze.

    11. Take pie out of freezer and leave at room temperature for 20 minutes before serving.



    Final Comments


    This is a nice unusual summer treat while camping or just being at home. Great to serve guests.
