This recipe was chosen and prepared by students in the Teen Living 3 class. According to Chef Chachie Dupuy, "the word jambalaya comes from the French jambon (ham) and the African word ya (rice). A la means with (French).
List of Ingredients
2 T. vegetable oil
1 1/2 C. diced cooked ham
1 C. chopped onion
3/4 C. finely diced celery
1 green bell pepper, julienned
1 clove garlic, minced
3/4 C. uncooked rice
2 C. tomato sauce
1 C. chopped cooked chicken
1 1/2 C. chicken stock
1 bay leaf
2 T. minced fresh parsley
1/4 t. dried thyme
1/4 t. Worcestershire sauce
1/8 t. cayenne pepperRecipe
Heat oil in a large skillet over medium heat and cook the ham, onion, celery, bell pepper, and garlic until the onion is soft but not brown (about 5 minutes). Stir in the remaining ingredients and bring to a boil. Lower the heat, cover, and simmer for about 30 minutes, stirring once or twice. Cook until the rice is done.
Serves 4.
