Asparagus and Cheese Brunch Casserole

List of Ingredients
7 –9 ounces ground turkey sausage
Butter-flavored cooking spray
1 ½ cups asparagus, chopped into ½ inch pieces
1 ½ cups light shredded cheddar cheese
2 cups egg substitute
1 cup low-fat cottage cheese
¼ cup fat-free milk
1 teaspoon black pepper
1 roma tomato, thinly sliced
Recipe
1. In a medium skillet brown sausage, drain and set aside. 2. Preheat oven to 350 degrees. 3. Spray a 7x11-inch or 2 quart baking dish with cooking spray. 4. In a bowl combine sausage, asparagus and ½ cup cheese. Spoon into baking dish. 5. In a medium bowl, stir together ½ cup cheese, egg, cottage cheese, milk and pepper. Pour over asparagus mixture. Sprinkle with remaining cheese and top with tomato slices. 6. Cover with foil and bake for 30 minutes. Uncover and bake an additional 15 minutes. Let stand 10 minutes before serving.
