Beans and Rice

1/2 cup dried red kidney beans
1/2 pound cubed stew meat or cut up roast
1/2 cup regular rice
2 yellow onions
2 green peppers
2 Bay Leaves
1/2 tsp. salt
1/2 to 1 tsp. or to taste curry powder
Black pepper if Desired to taste
Recipe
Wash and sort beans and cover with water. Bring to a boil boiling for a
min or so and then turn off stove and let them sit for an hr covered.
After an hour start cooking again.Add a bay leaf. In a small skillet
brown stew meat and then add to the beans.Cover and cook for two
hours.Check now and again to be sure they have enough water to keep them
from burning. Add the green pepper and onions that have been chopped
into 1/4 inch pieces.Add rice and curry powder and salt and cook until
rice is done about 20 mins.Be sure to have enough water to cover but not
more than the rice will need to cook.Let stand ten mins covered to
absorb any excess water when rice and vegetables are cooked.Makes about
four servings.
