1/8 TSP. CREAM OF TARTAR
DASH OF SALT
1 TBSP. SUGAR
1 TSP. VANILLA EXTRACT
2 TBSP. ALL-PURPOSE FLOUR
1/2 CUP APRICOT PINEAPPLE PRESERVES
2 TBSP. SLICED ALMONDS

PREHEAT OVEN TO 400' BUTTER THE BOTTOM & SIDES OF A OVENPROOF SKILLET. SPRINKLE WITH SUGAR. IN A MIXER BOWL ON HIGH SPEED, BEAT THE EGG WHITES, CREAM OF TARTAR & SALT UNTIL FOAMY. GRADUALLY BEAT IN THE 1 TBSP. OF SUGAR & VANILLA; BEAT UNTIL STIFF PEAKS FORM. USING A WHISK OR RUBBER SPATULA, FOLD IN THE FLOUR, THEN THE PRESERVES UNTIL WELLBLENDED. POUR INTO THE PREPARED SKILLET. SMOOTH THE TOP & SPRINKLE WITH THE SLICED ALMONDS. BAKE FOR ABOUT 20 MIN. OR UNTIL GOLDEN BROWN. SPRINKLE WITH THE POWDERED SUGAR. SERVE IMMEDIATELY.
