2 T Unsalted Butter
1 c Onion,Chopped
1/2 c Celery,Chopped
1/2 c Green Pepper,Chopped
1 clove garlic,minced
1 cn No Salt Added Tomatoes,(14 1/2 Ounce) 1 Lemon,Sliced
1 T Worcestershire
1 T paprika
1 bay leaf
1/4 t Thyme
1/4 t Tabasco
2 lb Catfish Fillets Recipe
Melt the butter in a large skillet over medium heat. Add the onion,
celery, green pepper, and garlic. Cook until soft. Add tomatoes and
their liquid. Break the tomatoes with a spoon. Add lemon slices,
Worcestershire sauce, paprika, bay leaf, thyme and liquid hot pepper
sauce. Cook stirring occasionally for about 15 mins or until the sauce
is slightly thickened. Press fish pieces down into sauce and spoon some
of the sauce over the top of the fish. Cover the pan and simmer gently
until the fish flakes when prodded with a fork. Serve over hot cooked
