Cabbage Strudel

4 cups finely chopped green cabbage
1/4 cup chopped onion
1 1/2 cups peeled, chopped apples
1/3 cup chopped pitted dates
1/4 cup plus 2 tbsp. low fat sour cream
1 tsp. prepared mustard
8 sheets frozen Phyllo Pastry, thawed
1 tsp. melted butter or margarine
Recipe
dCoat a large skillet with cooking spray. Heat and add the cabbage and
onion. Cover and cook for five minutes. Combine this mixture with
the apples and dates in a large bowl. In a measuring cup mix together
the sour cream and mustard till smooth. Add to the cabbage mixture
and stir well. Working with one sheet of pastry at a time, spray with
the cooking spray or brush lightly with melted butter. Place each
sheet on top of the other, after brushing with the butter until all 8
are combined. Spoon the cabbage mixture lengthwise down 1/3 of
the pastry, leaving a 1 inch border. Starting with the longest side,
roll up the pastry as you would a jelly roll. Place the roll seam side
down on a large baking sheet that has been coated with cooking spray.
Cut 1/4 inch diagonal slashes about 2 inches apart on the roll. Bake
at 400 degrees F. for 45 minutes. Remove and allow it to rest for
about 10 minutes before serving.
