1/3 cup sugar
1 Tablespoon corn starch
3/4 cup unsweetened orange juice
2 cups fresh blueberries
2 cups fresh peaches, sliced
1 teaspoon grated lemon peel
Biscuits
1 cup all purpose flour
1 Tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup lowfat milk
3 Tablespoons vegetable oil
1 Tablespoon sugar

In medium saucepan, combine 1/3 cup sugar and cornstarch. Gradually stir in orange juice. Cook over medium heat until mixture comes to a boil and is slightly thickened and clear, stirring constantly. Stir in blueberries and peaches; cook until fruit is hot. Stir in lemon peel; set aside.
Heat oven to 375 degrees. Lightly spoon flour in measuring cup; level off. In medium bowl, combine flour, 1 Tablespoon sugar, baking powder and baking soda Stir in milk and oil just til dry ingredients are moistened. Spray baking dish with vegetable spray and pour hot fruit mixture into 1 1/2 quart casserole. Drop dough by Tablespoons over fruit mixture. Sprinkle dough with 2-3 teaspoons sugar. Bake at 375 for 20-25 minutes or until biscuits are light golden brown. Serves 8.
