List of Ingredients 3 pounds roast (chuck, loin, round, sirloin), trimmed of visible fat 2-4 tablespoons barbecue rub 2 onions, sliced into thick rings 1 cup burgundy wine 1 cup nonfat chicken broth 1 cup water 3 large carrots, cut into 1 inch slices 2 medium white potatoes, peeled and sliced 2 medium sweet potatoes, peeled and sliced 2 medium turnips, peeled and sliced Instructions Trim roast of all visible fat and cover with barbecue rub. Coat cooker with nonstick spray and brown roast and half of the onions. Add liquids, bring to high pressure, and cook for 50 minutes. Cool quickly under cold water and add the rest of the onions and the root vegetables. Bring to high pressure again and cook 10 minutes more. Cool quickly. Serves 6
