    Poultry Casserole


    List of Ingredients


    • 2 chicken legs, skinned
    • 1 chicken breast, skinned and cut in half
    • 2 chicken thighs, skinned
    • 1 cup chopped onions
    • 1 cup chicken broth
    • 1 cup dry white wine
    • 3 carrots, cut into 2 inch pieces
    • 2 cups small red potatoes, cut in half
    • 1/2 teaspoon pepper
    • 1 bay leaf
    • Salt to taste
    • 2 tablespoons arrowroot dissolved in 2 tablespoons water


    Instructions


    1. Coat pan with nonstick spray and brown chicken parts with onions.
    2. Add all remaining ingredients, except arrowroot mixture, and bring to high pressure.
    3. Cook for 10 minutes and let pressure fall on it's own.
    4. Open cooker, add arrowroot mixture, and cook until casserole reaches desired thickness.
    5. Serves 6
