Poultry Casserole
List of Ingredients
- 2 chicken legs, skinned
- 1 chicken breast, skinned and cut in half
- 2 chicken thighs, skinned
- 1 cup chopped onions
- 1 cup chicken broth
- 1 cup dry white wine
- 3 carrots, cut into 2 inch pieces
- 2 cups small red potatoes, cut in half
- 1/2 teaspoon pepper
- 1 bay leaf
- Salt to taste
- 2 tablespoons arrowroot dissolved in 2 tablespoons water
Instructions
- Coat pan with nonstick spray and brown chicken parts with onions.
- Add all remaining ingredients, except arrowroot mixture, and bring to high pressure.
- Cook for 10 minutes and let pressure fall on it's own.
- Open cooker, add arrowroot mixture, and cook until casserole reaches desired thickness.
- Serves 6
