    Taco Tater Skins


    List of Ingredients


    • 6 large Russet potatoes
    • 1/2 cup butter or margarine, melted
    • 2 tablespoons taco seasonings
    • 1 cup (4 ounces) shredded cheddar cheese
    • 12 bacon strips, cooked and crumbled
    • 3 green onions, chopped
    • Salsa and/or sour cream


    Instructions


    1. Bake potatoes at 375 degrees for 1 hour or until tender. Remove from oven.
    2. Reduce heat to 350 degrees.
    3. When the potatoes are cool enough to handle, cut them lengthwise into quarters.
    4. Scoop out pulp, leaving a 1/4 inch shell (save pulp for another use.)
    5. Combine the butter and taco seasoning; brush over both sides of potato skins.
    6. Place skin side down on a greased baking sheet.
    7. Sprinkle with cheese, bacon and onions.
    8. Bake for 5-10 minutes or until the cheese is melted.
    9. Serve with salsa and/or sour cream if desired.
    10. YIELD: 2 dozen
