    12 vanilla wafers
    Two (8 ounces each) packages of Philadelphia Cream Cheese, room
    temperature
    1/2 cup sugar
    1 teaspoon vanilla
    2 eggs

    Recipe



    Line muffin tins with foil liners.*
    Place one vanilla wafer in each. Mix cream cheese, vanilla and sugar on medium speed until well-blended. Add eggs. Mix well. Pour over wafers. Bake 25 minutes at 325 degrees. Remove from pan when cool.
    (The cakes will "fall" a little in the middle as they cool -that's fine, because that's where the topping goes!) Chill. Top with topping of your choice. I love Cherry
    Pie Filling (delicious, and very pretty for Christmas!). I've also used Blueberry Pie Filling. For the 4th of July, I make 12 cherry ones and 12 blueberry - great for a party or barbecue. Or, you can fill with preserves or chocolate frosting, etc.
