    I love biscotti and took a recipe and redesigned it to includes white chocolate and dried cranberries.

    List of Ingredients




    2 cups flour
    1/2 cup walnuts, finely chopped
    1 tsp. baking powder
    1/4 tsp. salt
    3/4 cup sugar
    2 eggs plus 1 egg white
    1/4 c. vegetable or canola oil
    1 tbl. orange juice
    2 tsp. grated orange peel
    1-1/2 tsp. vanilla extract
    1/2 c. dried cranberries, chopped
    1/2 c. white chocolate chips, chopped (if you can find the mini chips you don't need to chop.

    Preheat the oven to 350°
    Combine the flour, walnuts, baking powder and salt then set aside. In a large mixing bowl combine the sugar and two whole eggs. Beat with an electric mixer at medium speed 2 to 3 minutes, or until it is thick and pale yellow in color. Add the oil, orange juice, orange peel and vanilla; beat for 1 to 2 minutes, or until well mixed. Gradually add the flour mixture and mix until well blended. Stir in the cranberries and white chocolate by hand. Turn dough onto a lightly floured surface (dough will be soft and sticky). Sprinkle with additional flour; knead flour into dough. With floured hands, shape into two (8 x 2-inch) logs. Place 3 to 4 inches apart on a greased baking sheet; flatten tops slightly. Combine remaining egg white with about 1 tbls. water; brush on logs, then sprinkle with sugar. Bake for 25 to 30 minutes, or until lightly browned. Let cool on baking sheet for 15 minutes. Reduce oven temperature to 300°. Using a serrated knife, cut logs diagonally into 1/2-inch slices then arrange slices, cut-side down, on the baking sheet. Bake for 8 to 10 minutes; turn slices and bake for another 8 to 10 minutes, or until golden brown. Remove to wire rack; let cool completely. Store loosely covered at room temperature. Makes about 2-1/2 dozen.
