Zucchini Bread
Always a good way to use the abundance of zucchini in the fall. And while you're at it, why not grate some of that extra zucchini and place in the freezer for the winter months?
List of Ingredients
3 eggs 1 c. white sugar
1 c. brown sugar 1 c. cooking oil
2 c. grated zucchini 1 tsp. soda
1 tsp. baking powder 1 tsp. salt
1 tsp. cinnamon 1 tsp. vanilla
3 c. flour 1 c. nuts Recipe
Combine and mix the dry ingredients until well blended.
In a separate container, beat eggs until foamy.
Add dry ingredients, zucchini and vanilla to the eggs and mix well.
Turn into 2 large loaf pans. Bake about 1 hour and 10 minutes (or until done) at 350°.
