My variation of an oldie
Recipe Introduction
This is a versatile recipe that can be eaten as a soup... leave out the hominy and use it to smother burritos, eggs or a variety of other things.
List of Ingredients
2 lb. pork, cubed
1 medium onion, chopped
1 lg. can white hominy (posole), drained
1 can diced tomatoes (about 14-6 oz.)
2 cloves garlic, crushed
8 oz. diced green chilies
1 teaspoon salt
1/2 teaspoon thyme
1/2 teaspoon ground cumin
1 cup chicken broth
flour tortillas
optional: crushed red pepper or some jalepeno pepper to add heat
Garnish:
Chopped green onions
Cilantro
Grated cheese
Sour Cream
Lemon or Lime juice
Recipe
Brown pork; move to crockpot. Sauté chopped onion until limp; drain oil. Place onion in crockpot and add remaining ingredients except tortillas and garnish items. Cook about 4-6 hours.
Serve with tortillas and individual choice of garnishes.
