    Baked Green Chile Chicken Rolls

    Source of Recipe

    Juana

    Recipe Introduction

Do you like Mexican (Tex Mex or Southwestern) style cooking? Give it a try. YUM!!!!
(This recipe could also be called "mock chili rellenos".)

    List of Ingredients

4 boneless skinless chicken breast halves or tenders
    4 egg roll skins
    2 egg whites
4 oz green chile -- chopped, medium or hot but NOT mild.
1 cup cheddar cheese (jack, or Mexican mix work well too)
    salt to taste
    2 tbsp picante sauce

    Recipe

Cut chicken breast in long strips and brown in skillet sprayed with non-stick cooking spray.
Dip one side of the egg roll wrapper in egg white. The dipped side is the outside of the roll.
Put 3 or 4 chicken strips just below the center of your egg roll wrapper.
Sprinkle on about 1-2 tablespoon of medium or hot green chilies. (I don't recommend mild). Top with 1/4 cup of shredded cheese.
Roll up egg roll. Place rolls on baking sheet sprayed with non-stick cooking spray and bake 350° for 20-25 minutes until golden brown. Top with a little picante sauce.

    Servings: 4
