    Carol's Chicken Flautas

    One of those recipes that was found after several years of searching.


    List of Ingredients


    • 3 tbls. butter
    • 1/4 c. flour
    • 1/4 tsp. salt
    • 1 c. chicken broth
    • 1 tbls. lemon juice
    • 1 tbls. parsley
    • 1 tbls. grated onion
    • 1/8 tsp white pepper
    • several dashes each of nutmeg and paprika
    • -------------
    • 1 1/2 c. diced cooked chicken
    • 12 (6 inch) corn tortillas
    • 4 c. vegetable oil
    • guacamole
    • salsa


    Instructions


    1. Pour cooking oil in fryer or large pan
    2. Preheat to about 375°F while preparing other ingredients
    3. Melt butter, stir in flour and salt. Add broth and cook stirring constantly until thick.
    4. Add lemon juice, parsley, onion, pepper nutmeg, paprika and chicken.
    5. Roll these mixture in the corn tortillas and deep fry until they start to crisp.
    6. To serve: top with guacamole and salsa


    Final Comments


    Any left over filling may be served on top of the flautas.
