Ez Pork Fajitas
List of Ingredients
1 lb. pork tenderloin, sliced thin
2-3 tbls. fajita seasoning or marinade *
1/2 onion sliced (white or green onions are lower in carbs)
1/2 green, yellow, or red pepper sliced
4 flour tortillas warmed
salsa (optional)
*I often times just use Italian Dressing for the marinade. Just be sure to drain it before cooking.
Recipe
1-Toss pork with fajita seasonings and allow to marinade 20 minutes.
2-Over med-hi heat in a large skillet, fry the pork with onion and peppers until just tender, about 3-4 minutes.
3-On 4 warmed tortillas place an equal amount of pork mixture in the middle of each tortilla and top with a small amount salsa (optional) and roll up.
variation.... try it with chicken and don't be afraid to add some quacamole and sour cream.
