    Green Chili with Pork Recipe

    Recipe Introduction

    I know of nothing that satisfies like green chile on a cold day. Also a great sauce for other dishes. YUM!!!

    List of Ingredients

    2-3 lbs pork roast, cubed
    2 tablespoons cooking oil or lard, bacon grease
    1 large chopped onion
    1 head minced garlic
    6 tablespoons flour
    1 (15 ounce) can tomatoes
    2 cups frozen or canned diced green chilies (I prefer Big Jims over Anahiems but I usually buy fresh Marisols and Anaheims to freeze)Any combination that gives you your desired level of heat will work and they can be bought roasted during September. I buy enough to freeze for the year.)
    1-4 teaspoons jalapenos (optional)
    5 cups water or chicken broth (broth adds more flavor)
    1 tablespoon chili powder (or to taste)
    2 tablespoons ground cumin (or to taste)
    1 teaspoon salt

    Recipe

    1. Cube Pork and brown in chosen grease, adding onions and garlic part way through the process.
    2. Add remaining ingredients cover and allow to cook in crockpot until done (about 6-8 hours on low.)

    Note: I like to use about 1 c. of the liquid blended with some flour as a thickening agen.
