Recipe Introduction
My family has always loved good Mexican food and after living in El Paso for several years, many resturants don't serve what we would consider "real" Mexican food.
List of Ingredients
Lard
Pork, cubed or ground
Fresh green chilies**
Onions, chopped
Garlic, crushed
Tomato ( 1 or 2 to taste)- I use canned whole tomatoes
salt
cumin (optional)
flour
water
Recipe
1-Saute the pork in preheated lard until starting to brown and partially cook.
2-While waiting for the pork, squeeze the tomato in your hand to crush. You may want to chop it a bit for finer texture.
3-To the meat, add fresh, peeled green chiles, onion, garlic, tomatoes,cumin and a small amount of water.
4-Simmer until meat is cooked through.
5-Make a thin paste of flour and water and add to meat mixture. Cook and stir until done.
**Note: I buy fresh roasted chilies at the farmers markets in the fall and put them in small freezer bags without peeling them. Freeze and when ready to use, just throw the unopened bag on a bowl of water to allow to thaw. Peel, chop and use. YUM!!!
You may want to peel the chilies before freezing and place in ice cube trays and freeze. Then place the "chili cubes" in a freezer bag. This will allow you to remove as few or as many cubes as you wish.
