1 (9-ounce) package fresh cheese tortellini
1/3 cup butter or margarine
1 pound fresh deveined, peeled medium shrimp
1 shallot, minced
2 tablespoons chopped fresh basil or 2 teaspoon dried basil
1/2 cup Parmesan cheese
1 clove garlic, crushed (optional)
Recipe
Cook tortellini according to the package directions. Drain and set aside.
Melt butter in a large skillet over medium-high heat. Add shrimp, shallot (garlic if you're using it) and basil, and cook for 5 minutes, stirring constantly, or until shrimp turn pink. Add tortellini and Parmesan. Toss gently. Garnish with basil.
