    Dry Rubbed Slow Roasted Baby Back Ribs

    Ribs
    2 racks of baby back ribs
    4 tablespoons Dry Rub for Meats

    Sauce
    1. 2 cups water
    2. ½ cup vinegar
    3. 2 tablespoons olive oil
    4. 1 tablespoon chili powder
    5. dash cayenne pepper
    8. Directly out of oven or hot off the grill, douse or “mop” the hot racks with this basting solution, wrap in foil, wrap further with several thicknesses of newspaper and allow to rest for 15 to 20 minutes.
    9. Serve, with a low carb barbecue sauce on the side, if desired.

    Recipe



    1. Very lightly oil the ribs with olive oil.
    2. Sprinkle Dry Rub for Meats (about 1 tablespoon per side) onto ribs.
    3. Wrap racks in plastic wrap and refrigerate for at least 1 hour; bring ribs to room temperature before cooking.
    4. Preheat oven to 275 to 300 degrees.
    - To cook in oven:
    1. Place a wire cooling rack onto a baking sheet to make clean up easier, line baking sheet with foil and liberally grease the wire rack.
    2. remove plastic wrap from ribs
    3. place rib racks on wire rack on baking sheet
    4. Roast for about 1½ hour, until quite tender. The meat should pull easily away from the bone.

    - To cook on the grill:
    1. whether gas or charcoal, grill heat should be medium low (about 275-300 degrees)
    2. cover the center of the grill grate with a sheet of aluminum foil to prevent flare ups, but leave a margin around the foil for heat to circulate freely.
    3. arrange ribs on oiled rib racks or place on the foil on the grill grate and close cover of grill.
    4. roast in grill for about 1½ hour to 2 hours, until meat easily pulls away from the bone.
    -Meanwhile, in a saucepan, make a basting solution. Combine and bring to a quick boil these ingredients and set aside to cool:
    1. 2 cups water
    2. ½ cup vinegar
    3. 2 tablespoons olive oil
    4. 1 tablespoon chili powder
    5. dash cayenne pepper
    8. Directly out of oven or hot off the grill, douse or “mop” the hot racks with this basting solution, wrap in foil, wrap further with several thicknesses of newspaper and allow to rest for 15 to 20 minutes.
    9. Serve, with a low carb barbecue sauce on the side, if desired.

    Serves 4 (or 2 very big appetites)
