2 boneless chicken breasts-flattened
6 pieces fresh asparagus-very briefly blanched
1/4 cup EACH of mozzarella and cheddar-shredded
1 beaten egg
seasoned bread crumbs
Recipe
Season chicken breasts with salt, pepper, garlic powder, parsley on one side. Place 3 pieces of asparagus on the seasoned side. Top each with half of the cheese mixture. Roll and fasten with toothpicks to hold shape. Roll in beaten egg then bread crumbs. Place on greased foil on a cookie sheet. Place in preheated 350 degree oven for 45 minutes.
