    Chicken Lo-Mein

    List of Ingredients




    12 oz. lo-mein noodles (or substitute spaghetti)
    1 lb. chicken, cubed
    3 tbls. oil
    1 1/2 tbls sherry
    2 cloves garlic, pressed
    1-2 thin slices ginger
    scallions (cut crosswise including tops) to taste

    1 1/2 tbls oyster sauce
    1/2 tbls. soy sauce
    1 tsp. sugar
    salt to taste (optional

    Recipe



    ~Place noodles in boiling water to cook while preparing remainder of recipe.
    ~In wok or heavy frying pan, heat oil, add chicken, garlic and ginger. As chicken starts to brown, add sherry and scallions.
    ~Combine oyster sauce, soy sauce, sugar and salt.
    ~Drain cooked noodles and add noodles and sauce mix to the chicken combination. Mix well and allow to simmer just long enough for flavors to mingle (about 2-3 minutes).

    Tip:
    Try adding snow peas, mushrooms or other vegetables of your choice.
