TURKEY WITH A WALNUT-PARMESAN SAUCE
List of Ingredients
1/3 c. walnuts, ground to a fine powder
2 Tbls. tablespoons butter
1/2 c. chopped onion
3 cloves garlic, chopped
pinch of ground cloves
pinch of ground cinnamon
pinch of cayenne
1/2 tsp.salt, or to taste
1-1/2 tsp.flour
3/4 c. chicken broth
1/2 tsp. lemon juice
2 tbls. Parmesan cheese
2 tbls. chopped fresh parsley
1 tbls. oil
4 turkey cutlets
1/4 tsp. freshly-ground black pepper, or to taste
Recipe
1. In a small saucepan, melt the butter over medium heat. Add the onion and cook until softened. Then, add the garlic and cook for about 30 seconds. Stir in the cloves, cinnamon, cayenne and 1/4 tsp. of the salt. Add the flour and stir well.
2. Whisk in the broth and simmer until the sauce starts to thicken, then add the ground walnuts and simmer another minute. Remove from the heat and stir in the lemon juice, Parmesan and parsley.
3. Meanwhile, in a large skillet, heat the oil over medium-high heat. Season the turkey cutlets with the remaining salt and the pepper, then cook them in the oil until they are just done (about 1-2 minutes per side -- they'll cook quickly). Serve with the walnut-parmesan sauce spooned over the top.
