    Glazed Lemon Nut Bread

    A delicate lemon flavor and as fresh as early spring.


    List of Ingredients


    • 4 tbls. butter
    • 3/4 c. sugar
    • 2 eggs
    • 2 tsp. grated lemon peel
    • 2 c. + 2 tbls. SIFTED flour
    • 2 1/2 tsp. baking powder
    • 1 tsp. salt
    • 3/4 c. milk
    • 1/2 c. chopped nuts (optional)
    • 2 tbls. lemon juice
    • ***********
    • 2 tsp. lemon juice
    • 2 tbls. sugar


    Instructions


    1. Preheat oven to 350°
    2. Cream togheth butter and 3/4 c. sugar until light and fluffy. Add eggs and lemon peel; beat well.
    3. Sift together flour, baking powder, and salt.
    4. Add dry ingredients alternately with milk and lemon juice to the creamed mixture, beating until smooth after each additon.
    5. Stir in nuts if you are using them.
    6. Pour into a greased loaf pan and bake 50-55 minutes or until done. Allow to cool in pan 10 minutes.

    7. Combine remaining 2 tsp. lemon juice and 2 tbls. sugar and spoon over the top.
    8. Remove from pan and cool completely. Wrap and store overnight.


    Final Comments


    This is definately better if allowed to age overnight.
