Corn Salad with Vinaigrette Dressing
To reduce my sugar intake, I substitute 1 packet of Splenda Sweetner for the sugar.
List of Ingredients
1 or 2 cans good quality canned corn, drained (I use 2 of the little niblets corn)
2 green onions, chopped
1 stalk celery, chopped
1/4 c. chopped red pepper
1 small carrot, chopped
Dressing:
1/2 c. olive oil
2 T. vinegar
1 T. sugar
1 tsp. Mrs. Dash
salt and pepper to taste
Recipe
Combine salad ingredients.
Combine Vinaigrette dressing ingredients.
Pour the vinaigrette over the salad.
Refrigerate.
Note:
You may prefer to make this a day ahead to allow the flavors to mingle.
