Cheddar Chowder with Ham
A hearty and filling meal all alone, or add a salad to round out your vegetable intake.
List of Ingredients
- 2 c. chicken stock *
- 2 c. diced potatoes
- 1/2 c. diced carrots
- 1/2 c. diced celery
- 1/4 c. chopped onion
- 1 t. salt
- 1/4 t. pepper
- 1/4 c. butter
- 1/4 c. flour
- 2 c. milk
- 2 c. grated cheddar cheese
- 1/4 c. cubed ham
Instructions
- Combine first seven ingredients in a large kettle. Boil 10-12 minutes. DO NOT DRAIN.
- Meanwhile, in a small saucepan, melt the butter and add the flour. Stir until smooth (about 1 minute). Slowly add milk while stirring. Continue heating; stirring constantly until thickened. Add grated cheese and stir until cheese is melted and fully incorportated with the white sauce.
- Add sauce mix and cubed ham to the vegetables which have not been drained. Heat thoroughly and serve.
Final Comments
6 servings.
*Note:You may wish to substitute beer for half of the chicken stock.
