Tomato Soup (from 4-B's)
A family favorite which I was given by a manager at a 4-B's Resturant. Of course it was necessary to adapt it to smaller quantities. The original started with a gallon of tomatoes!!
List of Ingredients
- 32 oz. canned, diced tomatoes (1 qt. if using home canned)
- 9 oz. chicken broth
- 1 oz. butter
- 1 tbls. chopped onion
- 2 tbls. sugar
- pinch of baking soda
- 2 c. cream (1 pint)
Instructions
- Lightly saute onion in butter.
- Combine tomatoes with juice, broth, sauteed onion sugar and baking soda in soup pot.
- Bring just to the boil and reduce heat to a simmer. Allow to simmer for 1 hour.
- Warm the cream in a double boiler, then add to tomatoe mixture.

If you find a 4-B's Resturant, don't miss this soup. They are no longer in our area, and without this recipe, it would be only be a memory.
