    List of Ingredients


    • 2 C frozen blueberries
    • 1/2 C water
    • 1/4 C sugar
    • 1 C plain Greek-style yogurt
    • 1C low-fat cottage cheese or ricotta
    • 3 eggs
    • juice of 1 lemon
    • 1 C white flour
    • 1/2 t baking soda
    • pinch of salt


    Instructions


    1. Mix blueberries, water and sugar in a saucepan. Cook over low heat, stirring often, gor 10 minutes or until berries begin to break apart. Whisk together the yogurt, cottage cheese, eggs, and lemon juice in a bowl.
    2. Mix the flour, bkng soda and salt in another bowl. Add flour to yogurt mixture and stir just until blended.
    3. Heat a skillet over med-low heat. Coat with cooking spray and add batter in large spoonfuls (about 1/4 C each). Flip cakes when tops bein to bubble, 3-5 min, and cook the seconsd side until browned. Serve with warm blueberries.
