Blueberry pancakes

List of Ingredients
- 2 C frozen blueberries
- 1/2 C water
- 1/4 C sugar
- 1 C plain Greek-style yogurt
- 1C low-fat cottage cheese or ricotta
- 3 eggs
- juice of 1 lemon
- 1 C white flour
- 1/2 t baking soda
- pinch of salt
Instructions
- Mix blueberries, water and sugar in a saucepan. Cook over low heat, stirring often, gor 10 minutes or until berries begin to break apart. Whisk together the yogurt, cottage cheese, eggs, and lemon juice in a bowl.
- Mix the flour, bkng soda and salt in another bowl. Add flour to yogurt mixture and stir just until blended.
- Heat a skillet over med-low heat. Coat with cooking spray and add batter in large spoonfuls (about 1/4 C each). Flip cakes when tops bein to bubble, 3-5 min, and cook the seconsd side until browned. Serve with warm blueberries.
