Chicken Fingers with Chipotle honey

- 1 lb chicken breasts, cut into strips
- salt and pepper to taste
- 3 egg whites, lightly beaten
- 2 C panko bread crumbs
- 2 T Dijon mustard
- 1 t chipotle pepper puree
- 1 T honey
Instructions
- Preheat oven to 450. Season chicken with s n p. Place egg whites in shallow bowl. Place crumbs on a plate and season those too. Dip chicken into egg, then toss in crumbs, being sure to coat fully.
- Place breaded chicken on baking sheet coated with spray and bake 10-12 min, unti crumbs have brwnd and chicken is firm
- Combine mustard, chipotle and honey in large bowl. Toss cooked chicken in the mixture so they are all evenly coated with sauce
