    Spinach Salad w/ warm bacon dressing

    List of Ingredients


    • 6 strips bacon, cut into small pieces
    • 1/2 red onion, sliced
    • 1 C sliced mushrooms
    • 8 oz shrimp
    • snp
    • 2 T pine nuts
    • 1 T Dijon
    • 3 T red wine vinegar
    • olive oil
    • 1 bag (6 oz) baby spinach


    Instructions


    1. Cook bacon. Add onion and mushroom to hot pan and cook til onion beins to brown about 3 min. Season the shrimo with snp and add to hot pan, along with ine nuts. Cook until shrimp are pink no more than 4 min. Stir mustard and vinegar into pan, season with snp. Add oil if dry.
    2. Diside spinach among 4 plates and top with hot shrimp mixture and some of the liquid in the pan. Sprinkle with bacon.
